When your stomach starts to grumble in the middle of the day, do you often think, "If I ignore it, maybe it will go away"? If so, you're like millions of Americans who are so busy that they work right through lunch. It might make you look like a superstar to your manager if you get nine hours of work done every day, compared to your coworkers' eight. But if you ignore your stomach's growls, you're also ignoring your body's plea for vital nutrients.
The ideal Ayurvedic lunch is well cooked, so it puts less strain on the agni, or digestive fire (a raw salad taxes the agni and can cause indigestion, because it isn't warm and soft from the heat of the stove). Ayurveda suggests a lunch made with fresh ingredients, so it is rich in prana (vital energy), and offers a variety of flavors, to excite the taste buds and provide a nourishing balance of foods. In fact, dining on small portions of five or six distinct dishes is considered ideal.
