Pasta a la Greque
Prep Time: 15 minutes, plus 1 hour to marinate
1. Cut tomatoes in half crosswise. Squeeze to extract seeds. Coarsely chop tomatoes. Combine tomatoes, shrimp, feta cheese, scallions, oregano, salt, and pepper in a large bowl. Toss well and let marinate in refrigerator for 1 hour.
2. Cook linguine according to package directions. Rinse and drain well. Toss warm pasta with shrimp and feta cheese mixture and serve immediately.
