For vegan readers: Coconut oil is a good ayurvedic alternative to ghee.

Is the above recipe for one serving? Or is it to share? As a detox are you supposed to replace your meals with kitchari or are you only supposed to eat one serving of kitchari per day?

Kitchari is a staple fast in Kundalini yoga - we tend to use the green mung beans rather than the mung dal, which leads to a longer cooking time, but it's very satisfying and nourishing.
Lots of people I know have used kitchari as a 40 day fast - for this you need to omit the coconut and add onions and lots of veg such as carrots, courgette (zucchini), squash, sweet potato, spinach, broccoli. Yum!


This is the Indian fasting food that I had mentioned last night - I couldn't remember the name of it, Kitchari.
