Oatmeal Chocolate Chip Quick-Bread Mix

This homemade mix makes a great gift for someone who's too busy to bake from scratch.

Ingredients

1 cup all-purpose flour
3/4 cup whole-wheat flour
3/4 cup rolled oats
3/4 cup light brown or raw sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/3 cup chopped walnuts
1/3 cup miniature chocolate chips

Directions

1. Mix the contents of this jar in a large bowl.

2. In a small bowl, whisk 1 cup buttermilk, 2 eggs, and 1/4 cup canola oil until well blended.

3. Stir the wet mixture into the dry mix until everything is just moistened (the batter will be lumpy).

4. Scrape into a buttered and floured 8-inch loaf pan and bake in a 350°F oven until a wooden skewer inserted in the center of the loaf comes out clean (about 45 minutes).

Gift Instructions:

Tuck the jar in a basket with a new loaf pan and a pretty linen kitchen towel. Layer the 10 ingredients in a 1-quart canning jar. Close the lid and attach a handwritten tag that offers the instructions above.
