Corn and Shiitake Mushrooms

Ingredients

  • 3 Tbs. chopped fresh mint
  • 1/2 tsp. salt
  • Freshly ground pepper to taste
  • 16-oz. bag frozen corn or 6 ears corn, kernels removed
  • 2 Tbs. butter or margarine
  • 8 oz. shiitake mushrooms, stemmed

Preparation

  1. In large skillet, melt butter or margarine over medium heat. Add mushrooms and cook, stirring often, until softened, about 2 minutes. Add remaining ingredients; cook, stirring often, 3 more minutes. Serve hot.
