Ingredients

  • 4 cups fresh carrot juice (from 2 lb. carrots)
  • 3/4 cup pine nuts
  • 1 avocado, sliced
  • 2 tsp. grated fresh ginger
  • 2 tsp. lime juice
  • 1 clove garlic
  • 1/4 tsp. cumin

Preparation

Purée all ingredients in food processor until smooth. Season with salt and pepper.
