Dairy-Free Peach Ice Cream

You don’t even have to peel fresh peaches to make this ice cream.

Ingredients

  • 4 cups sliced fresh peaches, or 1 lb. frozen peach slices
  • 1 cup vanilla soymilk
  • 3/4 cup packed light brown sugar
  • 2 Tbs. lemon juice
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. salt

Preparation

  1. If using fresh peaches, spread slices in baking dish, and freeze 4 hours, or until firm.
  2. Place peaches and remaining ingredients in food processor, and blend until smooth. Serve immediately, or freeze 30 minutes for firmer texture.
