Feta, Pistachio and Carrot Salad

Sweet meets salty in this salad. It’s even better when made a day ahead.

Ingredients

  • 4 cups pregrated carrots (or about 8 medium-size carrots, grated)
  • 3/4 cup chopped dried figs
  • 1/2 cup chopped green onions (about 4 onions)
  • 2 Tbs. olive oil
  • 1 1/2 Tbs. lemon juice
  • 1/4 cup chopped fresh mint
  • 1/4 cup shelled unsalted pistachios
  • 1/4 cup crumbled feta cheese

Preparation

  1. Toss together carrots, figs and green onions in bowl. Whisk olive oil and lemon juice in separate bowl; stir in mint. Pour over carrot mixture; season with salt and pepper. Stir in pistachios and feta. Cover, and chill until served.
