Fresh Basil Salad Dressing

Ingredients

  • 1/4 cup rice vinegar
  • 1 Tbs. honey
  • 2 tsp. white miso
  • 1/2 tsp. dry mustard
  • 1/2 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/4 cup safflower or other mild vegetable oil
  • 1/4 cup coarsely chopped onion
  • 1 medium clove garlic, minced
  • 1 1/2 cups fresh basil leaves
  • 1/4 cup silken tofu

Preparation

  1. In blender or food processor, combine onion and garlic and pulse on and off until finely chopped.
  2. Add remaining ingredients along with 1/4 cup water; blend until smooth. If it’s thick, add more water until mixture reaches desired consistency.
