Garbanzo Cobb Salad

Adapted from The South Beach Diet, this makes a light lunch or supper entrée.

Ingredients

  • 6 cups romaine lettuce, torn into bite-sized pieces
  • 6 oz. canned garbanzo beans, rinsed and drained
  • 1 cup diced ripe tomatoes or cherry tomatoes, halved
  • 1/4 cup crumbled blue cheese
  • 2 Tbs. soy “bacon” bits
  • 1/4 cup prepared low-sugar dressing or olive oil vinaigrette

Preparation

Arrange lettuce on platter. Arrange garbanzos, tomatoes, blue cheese and soy “bacon” bits over the lettuce. Just before serving, drizzle dressing over salad, and toss well. Serve on chilled plates.
