Energizing Snack: Green Pea Deviled Eggs and Toast

Eggs are filled with protein, and turmeric repairs and soothes tired muscles.

Ingredients

  • 2 large eggs
  • ½ cup frozen peas
  • 1 tbsp grated Parmesan cheese
  • 1/2 tsp extra-virgin olive oil
  • ¼ tsp lemon zest
  • 1/8 tsp turmeric
  • 1/8 tsp sea salt
  • 1 pinch ground black pepper
  • 3 whole-grain Melba toasts

Preparation

In a medium saucepan, cook eggs in boiling water for 10 minutes. Drain and cool. Peel eggs and slice in half lengthwise. Remove and reserve yolks in an airtight container or resealable bag, if desired.

In a microwave-safe container, microwave peas until cooked, 45–60 seconds. Place peas in mini-food-
processor. Add the next 6 ingredients, plus 1 tbsp water, and purée until smooth, 1 minute. Spoon pea mixture evenly into cooked egg-white halves. Enjoy immediately with Melba toasts.
