Grilled Corn and Black Bean Salad

Ingredients

  • 2 1/2 cups frozen grilled corn, thawed, or 5 ears corn, grilled and kernels removed
  • 1 14-oz. can black beans, rinsed and     drained
  • 1 yellow bell pepper, cut into ½-inch dice (about 1 cup)
  • 3/4 cup grape tomatoes, halved
  • 3 Tbs. coarsely chopped cilantro
  • 2 Tbs. olive oil
  • 2 Tbs. fresh lime juice
  • 1 small jalapeño, seeded and finely chopped (about 1 Tbs.)
  • 1/2 tsp. ground cumin

Preparation

  1. Toss together all ingredients in large serving bowl. Season to taste with salt and pepper, and serve.
