Nachos With Guacamole

Ingredients

  • 2 ripe avocados, peeled and chopped
  • 2 Tbs. fresh lemon juice
  • 2 cloves garlic, minced
  • 1⁄2 tsp. salt
  • 2 Tbs. chopped cilantro
  • 24 large corn tortilla chips
  • 3⁄4 cup canned vegetarian refried beans
  • 6 oz. shredded Jalapeño Jack cheese

Preparation

  1. Preheat oven to 450°F. In medium bowl, combine avocados, lemon juice, garlic and salt; mash with fork. Set guacamole aside.
  2. Spread each chip with thin layer of beans. Arrange on baking sheet and sprinkle with cheese. Bake until cheese is melted, about 5 minutes. Serve with guacamole.
