Spicy Mango Salsa

This recipe was submitted by VT reader Mari Kermit-Canfield, who lives in Bloomington, Ind., where she loves to cook up veggie meals.

Ingredients

  • 1 mango, peeled and diced, plus 1/8 cup mango juice
  • or 1 cup mango puree
  • ½ cup coconut milk
  • ½ cup peanut butter
  • 1 Tbs. sesame oil
  • 2 Tbs. hot pickled mango relish (if you can find it, otherwise add more hot sauce)
  • 2 Tbs. soy sauce
  • 1 Tbs. hot sauce (habanero or cayenne are best)
  • 2 Tbs. honey
  • 1 Tbs. chopped ginger
  • ¼ cup cilantro
  • 1 green onion
  • ½ tsp. ground black pepper
  • 1 tsp. ground cumin

Preparation

1. Heat coconut milk.

2. Place all ingredients in food processor, and blend until smooth.
