Spicy Yogurt Marinade

Ingredients

  • 2 cloves garlic, minced
  • 1 Tbs. minced fresh ginger
  • 2 Tbs. fresh lemon juice
  • ¼ cup chopped cilantro
  • 1 Tbs. curry powder
  • 2 tsp. ground cumin
  • 1 cup low-fat plain yogurt

Preparation

  1. In large shallow glass bowl, whisk together all ingredients until smooth and wellblended.
  2. Add vegetables or other foods to be marinated, turning to coat.
  3. If preparing ahead, store in airtight container in refrigerator up to two days. Stir well before using.
