Ingredients

  • 1/2 small chopped onion
  • 1 tsp extra virgin olive oil
  • 1 cup canned chickpeas
  • 1 cup canned crushed tomatoes
  • 1 cup frozen cauliflower
  • 1/2 tsp grated ginger
  • pinch red pepper flakes
  • 1/2 tsp garam masala
  • 1 cup cooked brown basmati rice
  • 1/2 cup tomato slices
  • 1/2 cup sliced cucumber
  • 1 cup plant-based yogurt
  • 1/2 cup pineapple

Preparation

In a large pan over medium-high heat, sauté 1/2 small chopped onion in 1 tsp extra virgin olive oil. Stir in 1 cup canned chickpeas, 1 cup canned crushed tomatoes, 1 cup frozen cauliflower, 1/2 tsp grated ginger, dash red pepper flakes, and 1/2 tsp garam masala and heat until bubbling. Store leftovers in an airtight container for up to 3 days.

Serve with 1 cup brown basmati rice, 1/2 cup tomato slices, 1/2 cup sliced cucumber.

For dessert try 1 cup plant-based yogurt and 1/2 cup pineapple.
