Ingredients

  • ½ cup cooked brown rice
  • 1 sheet seaweed
  • 1 tsp sesame seeds
  • 1 oz sliced tofu
  • 1 raw spear asparagus
  • 1 thin strip cucumber
  • 1 thin strip carrot
  • 1 cup miso soup
  • 1/2 cup shelled edamame
  • 2 oz sesame crackers
  • 1 cup chopped romaine lettuce
  • 1/2 cup chopped broccoli
  • 1/2 cup chopped cucumber
  • 1/2 tbsp chopped dried seaweed
  • 1 tsp extra virgin olive oil
  • 1/2 tsp rice vinegar
  • 1/2 tsp soy sauce

Preparation

Spread ½ cup cooked brown rice on 1 sheet seaweed; top with 1 tsp sesame seeds, 1 oz sliced tofu, 1 raw chopped spear asparagus, 1 thin strip cucumber, and 1 thin strip carrot. Roll tightly and slice.

Serve with 1 cup miso soup, 1/2 cup shelled edamame, 2 oz sesame crackers, and 2 cups of green salad with seaweed:

In a bowl, combine 1 cup chopped romaine lettuce, 1/2 cup chopped broccoli, 1/2 cup chopped cucumber, and 1/2 tbsp chopped dried seaweed. Drizzle with a mixture of 1 tsp extra virgin olive oil, 1/2 tsp rice vinegar, and 1/2 tsp soy sauce.
