Ingredients

Herb Mayonnaise

  • 1/2 cup soy mayonnaise
  • 1/4 cup minced fresh herbs of your choice (try a combination of basil, dill and
  • parsley)
  • 1 Tbs. minced fresh chives or scallion
  • 1 tsp. grainy mustard
  • 1 small clove garlic, minced (optional)

Herb Mayonnaise

  • 6 individual hero rolls (6 to 7 inches) preferably whole-grain
  • 4- to 6-oz. pkg. soy deli slices, cut in half
  • 2 cups finely shredded lettuce
  • 2 to 3 ripe medium tomatoes, thinly sliced
  • 4-oz. jar roasted red peppers in water, drained and thinly sliced

Preparation

  1. Herb Mayonnaise: In small bowl, mix all ingredients until well blended.
  2. Split each hero lengthwise and spread Herb Mayonnaise over both sides. Divide deli slices among roll bottoms. Divide lettuce, tomato and pepper slices among roll tops. Sandwich heroes together and serve.
