Creamy Sweet Pea Dressing Recipe
MAKES ABOUT 1 CUP
Ingredients:
- 1/2 cup green peas (fresh, or frozen and thawed)
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- 1 1/2 tablespoons smooth Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon sea salt
Instructions:
In a blender, combine all the ingredients and puree on high speed; thin out with 1 tablespoon of water, if needed, until desired consistency is reached. Dressing may be refrigerated in an airtight container for up to 5 days.
