Bake a Healthy Dessert this Valentine’s Day

Treat yourself to a berry-filled cake that boosts brain function.

Prep for a Valentine’s Day delight with this delicious Berry Nice Cream Cake. The sweetness from the fruits will make it feel like an indulgence, when in reality you’re getting a powerful vegan brain booster. It’s packed with cashews, walnuts, and blueberries which are known to boost brain function; they protect the brain from oxidative stress and improve memory and cognition.

The brain is the most energy-hungry organ in the human body by far. It consumes 25 percent of your energy and at times up to 50 percent of your oxygen, even while you sleep. Nowadays, with all the technological advances and human progress, it is completely exhausted. Our lives have not gotten any simpler; instead, our lives and especially our minds are overwhelmed—by the hundreds of decisions we must make at work and at home every day; the relentless television programs and news cycle to keep up with; our phones that aren’t just used for calls but instead call on us to connect with work, friends, and others 24/7; and so much more.

Prepare your ingredients on Saturday so they’re ready to go on Sunday.

Ingredients

For the vanilla nice cream cake layer

  • 2 cups raw cashews, soaked in water for 4 hours or overnight
  • 2 very ripe bananas with brown spots, sliced into 1-inch thick slices, arranged on a plate and frozen for 4 hours or overnight
  • 1 cup pitted medjool dates (about 10 dates)
  • seeds from 1/2 vanilla pod (or 1/2 teaspoon vanilla extract)
  • 1/4 cup unsweetened soy milk as needed to thin the nice cream

For the berry layer

  • 2 cups frozen blueberries
  • 1 cup soy milk, and more to thin as needed
  • 1/2 cup dates
  • 1 cup raw walnuts

Preparation

For the Cake Layer:

  1. Soak the cashews and freeze the banana slices either overnight or at
    least 4 hours before starting.
  2. In a blender, blend soaked cashews, frozen bananas, dates, and vanilla together until smooth and creamy, adding as little soy milk as possible. Spread into a pan. Place in the freezer for at least 2 hours.

For the Berry Layer:

  1. In a blender, blend blueberries, soy milk,
    dates, and walnuts until smooth. Carefully spread over the top of the
    vanilla nice cream cake layer and put in the freezer for 2 to 3 hours
    or until set.

To Serve:

  1. Dip a large knife in hot water and cut the cake; serve with fresh
    berries, nuts, flowers, or fresh herbs. Let it soften a little before eating
    so it’s creamier.
