Bitter Greens and Shaved Fennel Salad
Yield: 8-10 servings
Dressing
Yield: 1 ¼ cups
Ingredients
Bitter greens and shaved fennel salad
- 8 ounces arugula (1 bunch), washed, spun, and torn into bite-size pieces
- 1 pound radicchio (1 large head), washed, spun, and cut into bite-size pieces
- 1 pound fennel (1 bulb), outer layer and core removed and thinly sliced on mandolin
- Sea salt and freshly ground black pepper to taste
Bitter greens and shaved fennel salad
- ¼ cup champagne vinegar
- ½ teaspoon sea salt
- Pinch freshly ground black pepper
- 2 tablespoons agave syrup
- 2 tablespoons minced shallots (about 1 small shallot)
- ½ cup extra-virgin olive oil
Preparation
Bitter Greens and Shaved Fennel Salad
1. In medium bowl, combine arugula, radicchio, and fennel. Season with salt and pepper.
2. Toss with dressing (recipe below). Garnish plate with spiced pistachios (recipe below).
Dressing
In blender combine all ingredients until creamy.
