Ingredients

  • 2 slices whole-grain bread
  • 3 oz sliced baked tofu
  • 2 lettuce leaves
  • 3 slices of tomato
  • 1⁄4 sliced avocado
  • 1 grapefruit half

Preparation

Follow instructions for baked tofu on Day 1. Toast 2 slices whole-grain bread and fill with 3 oz sliced baked tofu, 2 lettuce leaves, 3 slices of tomato, and 1⁄4 sliced avocado.

Serve with a grapefruit half and coffee or tea.
