Ingredients
- 2 large sweet potatoes (1 1/2 lbs.)
- 3 Tbs. rice syrup
- 3 Tbs. pure maple syrup
- 1/3 cup orange juice
- 1 tsp. pure vanilla extract
- 1 tsp. minced fresh ginger
- 1 Tbs. tamari or soy sauce
- 1 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1/2 tsp. salt
- Scant pinch cayenne
- 1 1/2 tsp. kudzu
Preparation
- Preheat oven to 400ûF. Peel potatoes and cut into 1 1/2-inch chunks. In shallow 13 x 9-inch baking dish lined with aluminum foil, spread potatoes in single layer.
- In food processor or blender, combine syrups, orange juice, vanilla extract, ginger, tamari, cinnamon, cloves, salt, cayenne and kudzu. Process until smooth. Pour over potatoes; mix well.
- Cover and bake 20 minutes. Remove cover, stir well, and bake until potatoes are soft when pierced with fork or knife, stirring occasionally, about 30 minutes. Serve hot.
