Chicken Salad Sandwich

Ingredients
- 1 lb. pkg. “chicken”-flavored seitan strips
- 1/3 cup grated carrot
- 1 stalk celery, minced
- 1/3 cup minced red or green onion
- 1/3 cup pecans, optional
- 1/3 cup low-fat or vegan mayonnaise
- Salt and pepper to taste
- 8 slices bread of choice
- Lettuce leaves and tomato slices for garnish
Preparation
- Cut seitan into bite-sized pieces. In large bowl, mix seitan and remaining ingredients. Serve on bread with lettuce and tomatoes.
