Chipotle and Cilantro Butter

Ingredients
- 1 cup (2 sticks) salted butter, softened
- 1 cup cilantro leaves, chopped
- 2 1/2 Tbs. lime juice
- 1 fresh jalapeño pepper, seeded and minced (about 2 tsp.)
- 2 tsp. chipotle chili powder
- 1 tsp. lime zest
Preparation
1. Combine all ingredients in medium bowl. Chill 1/2 hour, or until firm enough to shape into a log.
2. Place butter mixture on 18-inch sheet of parchment paper or plastic wrap. Shape into log, and roll up in parchment or plastic. Twist ends to seal. Chill until firm. Will keep in refrigerator up to 2 weeks, or in freezer for 6 months.
