Ingredients
- 2/3 cup orange juice
- 2 Tbs. lemon juice
- 2 tsp. olive oil
- 1 tsp. grated lemon zest
- 1 tsp. grated orange zest
- 1/2 tsp. sea salt
- 1/4 tsp. pepper
- 3 cups cooked or sprouted quinoa
- 2 cups orange sections
- 1 small fennel bulb, chopped
- 1/4 cup chopped walnuts
- 2 Tbs. minced shallots
Preparation
- Whisk together both juices, oil, both zests, salt and pepper in serving bowl. Add quinoa, orange sections, fennel, walnuts and shallots, and toss to coat.
