Green Salad with Mango and Tomato

Ingredients
- 4 cups packed mesclun (mixed baby salad greens), about 1⁄4 lb.
- 1 large ripe tomato
- 1 ripe mango, peeled and sliced
- 2 Tbs. fresh lemon juice
- 1⁄2 tsp. salt
- 2 Tbs. olive oil
Preparation
- Arrange greens evenly among 4 serving plates.
- Slice off top and bottom of tomato and discard. Slice tomato into four 1⁄2-inch slices. Place one slice each in center of greens. Arrange mango slices over tomato slices.
- In small bowl, mix lemon juice, salt and freshly ground pepper to taste. Whisk in oil. Drizzle dressing over salads and serve.
