Homemade Granola

Ingredients

  • 2 C rolled oats
  • 1/4 C water
  • 2 T maple syrup
  • 2 T ground flaxseeds
  • 1 T canola oil
  • 1 tsp cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 C chopped hazelnuts
  • 1/4 C chopped hazelnuts
  • 1 C soymilk

Preparation

Preheat oven to 375 degrees. Coat a large baking sheet with cooking spray. Set aside. Place the oats, water, maple syrup, flaxseeds, oil cinnamon, and cardamom in a large bowl. Stir well to combine. Spread evenly on the baking sheet and bake for 20 minutes, stirring carefully once or twice. Spread evenly on the baking sheet and bake for 20 minutes, stirring carefully once or twice. Add the nuts and dates, and bake an additional 5 minutes. Remove and cool completely before storing in an airtight container at room temperature for up to 1 week. Serve with soymilk.
