Ingredients
- 1 1/2 lb. fingerling potatoes, cut into 1-inch pieces
- 1/3 cup chopped parsley
- 1/3 cup chopped chives
- 2 Tbs. olive oil
- 1 1/2 Tbs. fresh lemon juice
Preparation
- Steam potatoes 20 minutes, or until tender.
- Transfer to large bowl. Toss with parsley, chives, olive oil and lemon juice. Season to taste with salt and pepper.
