Rice-Soy Waffles

A light, crisp waffle that’s easy to make. Leftovers can be frozen.
Ingredients
- 1 cup rice flour
- 1⁄2 cup soy flour
- 1⁄2 cup potato starch flour
- 1⁄2 tsp. salt
- 4 tsp. baking powder
- 1 Tbs. sugar
- 3 large eggs
- 1⁄4 cup vegetable oil
- 1 1⁄2 cups plain soy milk or milk
Preparation
- In medium bowl, combine dry ingredients. Set aside.
- In small bowl, beat eggs, oil and soy milk. Add dry ingredients and fold gently with spoon. Don’t overbeat.
- Heat waffle iron. Cook according to manufacturer’s directions. Serve hot.
