Ingredients

  • 4 cups fresh or frozen peas
  • 1/4 cup low-fat sour cream
  • 1 1/2 Tbs. prepared horseradish
  • 1/4 cup chopped fresh chives

Preparation

  1. Bring large pot of salted water to a boil. Add peas, and cook 3 to 5 minutes, or until tender. Drain, reserving 1/4 cup cooking liquid.
  2. Transfer peas to food processor. Add sour cream, horseradish and cooking liquid, and blend until smooth. Sprinkle with chives, and serve immediately.
