Tofu Bagel

Ingredients
- 10 oz. extra-firm tofu
- 1/4 cup nonfat mayonnaise
- 2 tsp. Dijon-style mustard
- 1/2 tsp. garlic powder
- 3/4 cup diced celery
- 3/4 cup diced green pepper
- 1 small onion, diced
- 1 Tbs. balsamic vinegar
- 2 bagels, halved
- 2 tomatoes, sliced, then sliced again into half-circles for garnish
Preparation
- Drain and mash tofu. Mix it with mayonnaise, mustard, garlic powder, celery, green pepper, onion and vinegar.
- Spoon one-fourth of the mixture onto each bagel half. Surround with tomato slices, and serve.
