Vegan Challenge Recipe: Tuscan Pasta with White Beans and Swiss Chard

Ingredients
- 2 cups chopped Swiss chard
- 1 minced small garlic clove
- 1 tsp extra virgin olive oil
- 2 cups cooked pasta
- 1 cup cooked or canned white beans
- 1 tbsp pinenuts
Black pepper
- 1 cup mixed baby greens
- 1/2 cup cherry tomatoes
- 1 tsp extra virgin olive oil
- 1 tsp red wine vinegar
- 1 cup grapes
Preparation

In a large pan over medium-high heat, sauté 2 cups chopped Swiss chard and 1 minced small garlic clove in 1 tsp extra virgin olive oil, 2 minutes. Add 2 cups cooked pasta, 1 cup cooked or canned white beans (rinsed and drained), and 1 tbsp pinenuts; season with sea salt and black pepper. Store leftovers in an airtight container for up to 3 days.

Eat with a slice of whole-grain bread and a Misto salad: Top 1 cup mixed baby greens with 1/2 cup cherry tomatoes and 1 tsp extra virgin olive oil mixed with 1 tsp red wine vinegar. Season with salt and black pepper. For dessert have 1 cup grapes.
