Vegan Challenge Recipe: Faux Grilled Cheese With Avocado

  • ½ tsp non-dairy margarine
  • 2 slices whole-grain bread
  • 1 tbsp tahini
  • 2 oz plant-based cheese
  • 1/8 avocado
  • 1 cup canned tomato soup

Spread ½ tsp non-dairy margarine on each of 2 slices whole grain bread. In a small skillet over medium heat, place 1 slice bread “buttered” side down and top with 1 tbsp tahini, 2 oz plant-based cheese, and second slice of bread “buttered” side up. Cook, flipping once, until both sides are golden. Serve with 1/8 avocado.

Serve with 1 cup canned tomato soup.
