Peach Honey, which tastes best when made from fresh peaches, can accompany a variety of dishes. If using dried peaches, soak them for 1 1/2 hours in warm water to cover, or until soft and pliable. Remove the skins with your fingers, then proceed with the recipe, adding an extra tablespoon of honey to compensate for the tartness of the dried fruit.
Ingredients
- 1 lb. fresh peaches, peeled, pitted and sliced; or 1 lb. frozen peaches; or 1 lb. dried peaches
- 3 Tbs. honey
- 1 tsp. fresh lemon juice
Preparation
- Blend all ingredients in food processor for 3 minutes until smooth. Pour into container, and refrigerate for up to 2 weeks.
